Koro kratok fermentation used Rhizopus oligosphorus was one of Indonesian’s society methods to consumed kratok. produced proteolytic enzyme which can be break down complex protein simple protein. Protein degradation observed based on the time koro Fermentation times were 0 hours, 12 24 36 48 72 96 hours and 120 fermentation. Parameters included activity, growth mycelium, dissolved protein, concentration degree hydrolysis also pattern using SDS PAGE. Observation showed that mycelium growth, directly proportional length time. The results observation patterns PAGE show longer time, simpler produced. bigger degration
